What is Rizoma Olive Oil?
Rizoma is an extra virgin olive oil brand born in Andalusia. We make single-varietal oils with character: no blends, no intermediaries, with personality. Two oils, two varieties, one origin: Jaén.
Where does Rizoma oil come from?
Our Picual comes from Úbeda, Jaén. Our Royal from the Sierra de Cazorla, also Jaén — the province that produces 20% of the world's olive oil. Two estates, two landscapes, two characters.
What varieties do you produce?
Picual — The most planted variety in the world and the most characteristic of Jaén. Intense profile: green fruitiness, marked bitterness, persistent peppery finish. Acidity 0.15°.
Royal — A native variety from the Sierra de Cazorla. Soft profile: ripe fruitiness, almond notes, sweetness. Acidity 0.11°.
What does "first cold press" mean?
The oil is extracted below 27°C within the first hours after harvest. The result: higher polyphenol concentration, more vibrant aromas, a quality you cannot achieve when the process is rushed or heated.
When is Rizoma oil harvested?
2025 harvest. We pick at the optimal moment of ripeness — when polyphenols are at their peak and the oil says everything it has to say.
Do you have organic certification?
We are not organically certified. We work by our own standards: no compromise on quality, with full transparency on origin, variety, and process.
What size is available?
500 ml per bottle. Available in Picual, Royal, or as the Gift Pack (Picual + Royal together).
Which dishes work best with Picual?
Bread with tomato, bold salads, carpaccios, grilled meats, rice dishes. For when the oil needs to say something.
