What is early harvest olive oil?

Early harvest olive oil is pressed from olives picked before they ripen — in October or early November, when the fruit is still green. At this stage, the olive is dense with polyphenols, chlorophyll, and flavour compounds. The yield is lower. The oil is worth more. The difference is everything.

Why timing matters: the polyphenol window

As the olive ripens, its polyphenol content drops. A fully ripe black olive has a fraction of the polyphenols of a green early-harvest fruit. This is why early harvest olive oil is greener, more intense, more bitter, more peppery — and nutritionally superior. The compounds that give olive oil its documented health benefits are at maximum concentration in October. By December, they've degraded significantly.

Early harvest vs late harvest: the taste difference

Late-harvest olive oil is milder, softer, more golden. It's easier to like immediately. Early-harvest is a commitment — it asks something of you. The bitterness at the front, the peppery finish at the back of the throat. These are not defects. They are indicators. The more you taste, the more you understand what they mean.

How long does early harvest EVOO last?

Early harvest olive oil has a shorter shelf life than refined oil — but longer than most people think. Properly stored away from heat and light, Rizoma EVOO maintains peak quality for 12–18 months from harvest. Once opened, consume within 3–4 months for best flavour and polyphenol potency. The bottle is 500ml by design — the right size to finish before it fades.

Rizoma: early harvest from the Sierra de Jaén

Jaén produces 20% of the world's olive oil. Most of it is harvested late, extracted at industrial scale, and sold anonymously. Rizoma does the opposite: early harvest, two varieties (Picual and Royal), named after the land. The oil that comes out is the most direct expression of what Jaén can be when it tries.
