Europe produces the world's best olive oil. And within Europe, the Sierra de Jaén in southern Spain is — by volume, by science, and increasingly by critical recognition — the most important olive oil territory on the continent. This is where Rizoma is from. This is why it tastes the way it does.

What makes Jaén EVOO exceptional

Three factors converge in Sierra de Jaén that are difficult to replicate anywhere else in Europe: altitude (600–900m, giving cold nights that slow ripening and concentrate flavor), the Picual cultivar (the world's most polyphenol-dense commercial variety), and a dry Mediterranean climate that produces small, intense olives with exceptional oil character. The result is EVOO with a polyphenol count that regularly exceeds 400 mg/kg in early harvest — double or triple what most supermarket oils contain.

Picual & Royal: our two varieties

Picual 500ml — The backbone of Jaén. Intense green fruitiness, clean bitterness, long peppery finish. Exceptional for cooking, finishing dishes, or tasting neat. High oxidative stability means it holds up to heat without losing its character.

Royal 500ml — The rare one. Royal is almost exclusively grown in the Sierra de Jaén. Floral, delicate, complex. Notes of fresh-cut grass, green almond, and a soft finish. The oil you use when the dish shouldn't compete — it should complement.

Polyphenols: the number that matters

The EU health claim for polyphenol-rich olive oil requires ≥250 mg/kg. Both Rizoma varieties exceed this threshold. Polyphenols aren't just a health marker — they're also the compounds responsible for the bitterness, pungency, and complexity that distinguish great olive oil from anonymous one.
