Royal has the manners of a well-bred village: ripe fruit and open meadow after a short storm. It doesn't show off, but it wins you over by insisting.

Soft on the palate, sweet, elegant. A romantic oil — the kind that reminds you there are still small truths hidden among the old olive trees of Jaén.

Process and care

Process: cold extraction, always below 27 °C.

Harvest: early harvest. Picked at night and milled before dawn: less than 12 hours from tree to tank.

Taste and aroma: green almond, apple and wildflowers. Soft fruitiness, with light, balanced bitterness and pungency.

Care: keep away from light and heat. Once opened, it is at its best for around 60 days; after that it is still perfectly good to use.
